然而提早刨除種殼所帶來的影響是,生豆乾燥到一半沒了最後兩層保護罩(注:咖啡豆的四層護體:果皮、果膠、種殼、銀皮),等於脫光了衣服曬太陽一樣。溼刨法雖然解決了乾燥時間的問題,但相對的生豆遭到黴菌、真菌、酵母菌的污染機率也大幅提升。但矛盾的卻是,這些因素卻反而成爲打造曼特寧特別香氣的關鍵因素&hellip;&hellip;</p><p>
</p><p>溼刨法帶來的另外一個特色就是所謂&ldquo;羊蹄豆&rdquo;機率變高的問題。由於生豆在還很潮溼的半軟階段用刨殼機去種殼,脆弱的軟溼生豆非常容易受到機械力壓迫而裂開、斷掉或刮傷豆表,而形成所謂的羊蹄豆、刮傷豆,致使生豆賣相變差。</p><p>

蘇門答臘溼刨法,是源於印度尼西亞蘇門答臘島的咖啡豆處理工藝。這個地區所產出的咖啡豆,也就是大名鼎鼎的曼特寧咖啡啦,別稱叫&ldquo;蘇門答臘咖啡&rdquo;。</p><p>
</p><p>溼刨處理法在處理工序和風味表現上有什麼特徵?</p><p>

通過溼刨法制成的曼特寧咖啡,低酸、低甜、高醇而且口感十分濃郁。它也是熱愛單品咖啡的小編最愛??</p><p>
</p><p>
應該說,蘇門答臘溼刨法和曼特寧咖啡的產生是不可分割的。蘇門答臘島的氣候潮溼,而傳統的咖啡豆三大處理方法:日曬、水洗和蜜處理,對於日照條件要求都十分之高。於是,當地的咖啡製造者因地制宜,發明了這種獨特的製作方法。</p><p>

下面,小編就來理一理步驟:</p><p>

首先,每年3-5月、9-12月是曼特寧咖啡收穫的季節,蘇門答臘地區的農戶都會採收咖啡鮮果豆,然後去皮,將帶殼的果豆置入裝有當地山泉水的大容器中,並去掉飄浮於水面的瑕疵果豆。</p><p>
</p><p>
然後,將沉入水底的優質果豆稍微清洗後取出,放進塑膠袋內,做一次&rdquo;幹體發酵&ldquo;,也就是讓果殼表面的果膠發酵增味。一般情況下發酵時間在12&mdash;36小時之間,發酵的時間越長,酸味就越重。</p><p>

所以在收穫季節,你會見到蘇門答臘當地家家戶戶門前都攤著塑膠袋晾咖啡,這也是他們一年之中的主要收入來源。</p><p>

最後,帶殼的咖啡豆被暴曬過後,含水率大約在30%&mdash;50%之間,豆體呈現半硬半軟狀態。這時,農戶們會將它們送到咖啡處理工廠進行&rdquo;脫殼&ldquo;,利用刨殼機來抹掉種殼。之後繼續裝入塑膠袋曬乾,加速乾燥的進程。</p><p>

然後再過個2-3天,咖啡豆含水率脫幹到12%-13%,便是大功告成,前後大約耗時四天。</p><p>

看過以上製作工藝,大家應該清楚了吧??溼刨法大大縮短了咖啡豆的發酵期,讓酸味也大大降低了,同時令焦糖與果香明顯,這也就是曼特寧咖啡經典的&ldquo;地域之味&rdquo;啦!</p><p>

但是,這種製法離開了蘇門答臘島當地,也算不上正宗了,就像小編上面說的,蘇門答臘島的氣候決定了這種溼刨法是最優選擇。</p><p>
