1.埃塞俄比亞 沃卡(Ethiopian Yirgacheffe Worka):這個品名指的就是埃塞俄比亞(國家)裏的耶加雪菲(大地區)裏面的沃卡(合作社)所出產的咖啡豆,每顆咖啡豆都出自沃卡,這很明顯是單品豆,一煮就可以好好體驗耶加雪菲 沃卡的特質。</div>

2.紅色天鵝絨(red velvet):這種一看既沒有國家又沒有產區的品名,通常都是綜合豆。而店家一般取名其實沒什麼規則,大多喜歡根據咖啡喝起來的調性、口感取個聽起來很美妙的名字、有些乾脆用實驗的第幾號作品、當然也有莫名其妙不知所云的,這個還是看店家的愛好。所幸大多數店家還是會特別註明這是<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆,還有些會標明由哪些單品咖啡組合而成。</div>

例如說就有芙勞拉、阿利姆、沃卡三支不同莊園的埃塞俄比亞 耶加雪菲,根據定義有兩種以上不同產地出產的咖啡豆就是<a href="https://m.gafei.com/views-87328">綜合咖啡</a>,但偏偏三支咖啡豆都是產自埃塞俄比亞 耶加雪菲,只是莊園不同,那這個要稱之爲埃塞俄比亞 耶加雪菲單品豆,還是埃塞俄比亞 耶加雪菲綜合豆呢?</div>

一般還是會稱之爲<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆,畢竟研究出這個配方的時候,還是將三支耶加雪菲當做味道不同的獨立作品處理,並將三支豆子以不同比例混合烘焙,堆棧出不同的滋味,所以稱之爲綜合豆還是比較適合的</div>

1.義式(花式)咖啡配方專用</div>

目前精品咖啡中,義式(花式)咖啡仍然是主流,而義式咖啡勢必要添加奶製品,而過酸的咖啡或口味太單薄的單品咖啡,就比較不適合添加到牛奶中。</div>

</div>
<div>
<a href="https://m.gafei.com/views-87328" style="font-size: inherit; font-style: inherit; font-variant-caps: inherit;">綜合咖啡</a>豆目的</div>

因此精品咖啡館通常都會爲了自己的義式咖啡研發專用的<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆,一般較常見的特性是:crema較多、甜度較高、強調尾韻表現(巧克力、蜂蜜、核果等)、味覺均勻而不特別突出酸味,一般也習慣稱之爲義式豆……</div>

當然這只是一般性的推測,義式豆的表現隨著各家咖啡館想詮釋的風味,其實有很大的差異,舉兩個較特殊的例子:</div>

♥特別強調crema,濃到一般人都會嚇到,尾韻卻是超明顯苦巧克力風味的成人風味義式豆</div>
<div>
</div>
<div>
♥不強調crema,以清淡的質感讓酸甜的水果風味與牛奶協調的微妙平衡義式豆</div>
<div>
</div>

由以上兩個案例就能看出,義式豆的變化非常多,而且要能烘焙出理想的味道極爲考驗咖啡館對風味的瞭解與組合,因此研判義式豆的優劣是不少人判斷一家咖啡館好壞的標準之一。但個人建議也不用那麼具有批判性,不如多加玩味、多加欣賞、多加想像別人家的義式豆,對自己的幫助更大。</div>

2.適合長期供貨:</div>

這點和義式咖啡仍然有關,一般咖啡館的義式咖啡的各項材料都有嚴謹的比例,藉此維持出杯的品質。而其中影響最大的咖啡豆恰好也是最容易出問題的材料,尤其是使用單品做義式咖啡的espresso時,常常面臨某一單品豆斷貨的問題,一時要換成別種單品豆就會有配方必須重新調整的大麻煩。</div>

因此爲了維持義式豆的供貨長期穩定,使用貨量較大的產地咖啡豆(可能非莊園豆)進行配製,就可以儘可能避免某些特定咖啡斷貨的問題。</div>

另外因爲原先就是<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆,若其中某支咖啡品質有異,也可以儘快拿其他較接近的咖啡豆進行修正替換,因爲佔的比例較少,抽換後較能維持風味的一致,不至於如單品豆般,特色明顯且佔比100%,一但抽換就全變樣了。</div>

3.模擬特殊風味:</div>

這個目的一般比較少見於精品咖啡館,大部分是商用咖啡爲了模擬某些名牌咖啡而利用<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆進行風味修正。</div>

</div>
<div>
最常見的範例就是所謂的”藍山風味”咖啡、”麝香貓風味”咖啡、還有”古坑風味”咖啡,這種掛著風味名號的商品,往往整包咖啡豆裏面一顆藍山也沒有,只是用其他咖啡拼湊:想像中的藍山的滋味。當然也可能會摻入一點點原產地的咖啡豆,例如市面上販售的古坑咖啡,整包豆往往不超過10%的古坑,大量用其他產地的豆子濫竽充數。</div>

當然如果真的能用較便宜的咖啡豆拼湊出藍山的風味,那其實也很厲害,但一般來說商用咖啡之所以用這樣的名字,主要還是想利用名牌咖啡的名氣,去吸引消費者注意,以我自己的經驗來說,那根本和藍山真正的風味是兩回事。</div>

而且所謂的藍山、麝香貓、古坑等名號超響亮的咖啡豆,其實已經不是目前精品市場的主流,甚至根本就未進精品咖啡的範疇,主要還是商業行爲的炒作,而且假貨甚多,若非真有把握大可不必花大錢購買。</div>

</div>
<div>
而我個人認爲,就算是真的藍山也未必比莊園咖啡好喝,cp值太低。更不用說模擬藍山風味的商用咖啡豆了,一般都是四不像。</div>

4.挑戰味覺組成:</div>

一家精品咖啡店若有配製<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆的能力,有時會配製出好幾支不同風味的綜合豆,讓店家的各項飲品的味道更爲多變。</div>

舉個例子:某些咖啡館除了義式咖啡用的<a href="https://m.gafei.com/views-87328">綜合咖啡</a>豆外,會特別配製一支專門用來做espresso單喝的咖啡豆,可能就不會像義式豆一樣重視crema或平衡感,進而挑戰強烈的果酸、清爽的茶感、柑橘類風味等,讓喜愛單喝espresso的消費者可以大快朵頤。當然除了espresso單喝專用豆外,也有爲syphon、手衝、冰滴、摩卡壺、掛耳包等器材設計的咖啡豆。</div>
