1、第一步,先了解咖啡機蒸汽系統的正確操作流程,明白打奶泡前後空噴蒸汽管的目的是什麼,明白毛巾和隨手清潔在咖啡製作中的重要意義。 第二步,學會如何用噴頭接觸奶面,選點的位置、選點的深度。 第三步,認識兩個溫度。一個是發泡的起止溫度,一個是奶泡製作完成的溫度。這兩個溫度對於初學者來說是非常重要的,這直接關係到奶泡的打發原理是否掌握。</div>

2、將牛奶倒入奶缸中,份量不要超過奶泡壺的1/2,否則製作奶泡的時候牛奶會因爲膨脹而溢出來。</div>
<div>
</div>
<div>
3、用咖啡機蒸汽找準角度將牛奶打發綿密,溫度到60度左右,不可以超過70度,否則牛奶中的蛋白質結構會被破壞。</div>

</div>

奶泡要求;</div>

1 打奶:最重要的技術,雖然不是很高深但是需要長時間的練習,要求奶泡細膩圓滑,千萬不要有大的奶泡。2 打奶的角度:打奶最好是和蒸汽噴頭成45度角,根據上下浮動來取決於奶泡的粗細。3 只有半自動的咖啡機器才能做出最好的拉花咖啡。4 咖啡的油脂問題也起到關鍵性的作用,而且直接影響到一杯咖啡的口味問題。5 太小的杯子需要太多的技術經驗.</div>

二、拉花製作</div>

將打發的牛奶與Espresso充分融合</div>
<div>
</div>
<div>
①、1\\3處選點注入,咖啡杯傾斜角30度左右,提高拉花缸杯10cm以刺破咖啡油脂;</div>
<div>
</div>
<div>
②、降低拉花缸杯,使拉花缸貼住咖啡杯口,保持一定的流量左右呈1cm寬度均勻擺動, 使表面出現變白點;</div>
<div>
</div>
<div>
③、隨着晃動缸杯操作,形狀不斷變大,此時注意:拉花剛千萬不要往後退,並繼續定點保持流量擺動;</div>
<div>
</div>
<div>
④、當杯量越來越多之時,咖啡杯要慢慢放平,防止溢出。繼續晃動缸杯可使得心形圖形更具層次線條感;</div>
<div>
</div>
<div>
⑤、杯量達9分滿時,緩緩提起缸杯,收細流量,慢慢往心形前段注入;</div>
<div>
</div>
<div>
⑥、牛奶的收線位置,決定了心形左右大小的勻稱度;</div>
<div>
</div>
<div>
⑦、收線結束的時刻,即是杯量達滿而不溢之時,此時的咖啡杯中奶泡厚度應在1-1.5cm的厚度時,恭喜,一杯漂亮的心形卡布基諾咖啡製作完成;</div>

<div>
咖啡初學者需要知道的咖啡拉花技巧</div>
<div>
</div>
<div>
1、奶泡一定要細膩而綿密,同時一定要將奶泡和牛奶充分混合,不能讓它們分層,否則奶泡和牛奶倒入咖啡杯中的時候會出現牛奶和咖啡混合,而上面是一堆奶泡的情況。</div>
<div>
</div>
<div>
2、蒸汽管的出汽方式,主要分爲:外擴張式跟集中式二種。不同形式的蒸汽管,產生的出汽強度跟出汽量就會有所不同,再加上出汽孔的位置跟孔數的變化,就會造成在打牛奶時,角度跟方式的差異。而外擴張式的蒸汽管在打發牛奶時,不可以太靠近鋼杯邊緣,纔不會容易產生亂流現象;而集中式的蒸汽管,在角度上的控制就要比較注意,不然很容易打不出良好的牛奶泡組織。</div>

3、蒸汽量大小</div>
<div>
</div>
<div>
蒸汽量越大打發牛奶的速度就越快,但相對的比較容易有較粗的奶泡產生,蒸汽量大的方式,也較適合用在較大的鋼杯,大小的鋼杯則容易產生亂流的現象。蒸汽量較小的蒸汽管,牛奶發泡效果較差,但好處是不容易產生粗大氣泡,打發打綿的時間較久,整體的掌控會比較容易。</div>

4、開始倒入牛奶時,我們應該將拉花缸提高,讓牛奶的流速呈細長而緩慢的方式注入,這樣做的目的是爲了壓住白色泡沫,不讓其上翻,才能使牛奶和咖啡充分融合。</div>
<div>
</div>
<div>
5、當我們注入牛奶到達咖啡杯一半的高度時,應將拉花缸的高度降下,同時注入牛奶的方式發生改變,這時的牛奶流速是快而粗的,這樣的目的是爲了是白色奶泡上翻,方便我們拉花。</div>
<div>
</div>
<div>
4、當看到白色奶泡浮出時,左右搖晃,杯子中會開始呈現出白色的“之”字型奶泡痕跡。</div>
<div>
</div>
<div>
6、逐漸往後移動拉花杯,並且縮小晃動的幅度,最後收杯時往前一帶順勢拉出一道細直線,畫出杯中葉子的梗作爲結束。</div>
<div>
</div>
<div>
最後一定要說的是多練習,邊做變分析問題出在哪裏對症下藥,量變才能質變</div>
