消費者(Customer)是觀衆,他們花錢買了門票,希望得到最佳的體驗與享受。
今天這個篇幅,讓我們走進烘焙師的世界,聊聊風味之間的化學變化......

01.
咖啡風味的變化演進
1960年第一波精品咖啡浪潮大家都有咖啡喝1
早期美國是英國的殖民地,有人說,那時的咖啡叫Cowboy Coffee(牛仔咖啡),這種咖啡烘的很淺,讓牛仔當水喝。直到1773年的“波士頓傾茶事件”美國人假扮印第安人將茶葉推入波斯頓灣,以此告訴世人美國要獨立了,他們要有自己的飲料了。全世界三個略有成癮性的飲料最受歡迎:酒、茶和咖啡。最初大家對咖啡的焙炒並不是那麼的重視,只求有咖啡喝,所以當時基本上都是肉桂烘焙的程度,大家也喝的很舒服。

直到有一天,星巴克出現了,它推崇深烘焙的咖啡,學過烘焙的朋友都知道,咖啡豆在烘焙的過程中會有“失重”現象,隨着咖啡豆的溫度升高,體積增加而質量減少,所以用同一克數衝煮一杯咖啡,深焙的豆子數量會多於淺焙的豆子。當時深焙咖啡受人們喜愛除了它濃郁的口感,更因爲它“便宜又大碗”,星巴克就用這個方法教育全世界的人們,深焙咖啡是好的。於是第二波精品咖啡浪潮就出現了,它的“可複製性”強,以星巴克爲例,全世界那麼多家連鎖店,可以讓人們在世界的各個角落喝到品質風味幾乎統一的咖啡,讓大家都有“熟悉”的咖啡喝。

2000年第三波精品咖啡浪潮關注產地,重視風味3
兩千年出現的第三波精品咖啡浪潮,講究的是咖啡的產區風味、微地形條件和處理法,進而衍生到研究烘焙師的烘焙風格等。這是精品咖啡的轉折點,人們不再僅僅滿足於“能喝”,而是“會喝”。

2020年第四波精品咖啡浪潮?“Home Barista”,精品咖啡走入家庭4
每個人都在猜測第四波精品咖啡浪潮會是什麼,我大膽假設,應該是“Home Barista”(家庭咖啡製作者),讓精品咖啡真正走進家庭。如今市面上的咖啡器具越做越漂亮,烘焙機越做越精良,功能越發完善,操作簡便的同時也不乏美感。這正是生活美學和精品咖啡最完美的詮釋與發展,我相信這是第四波精品咖啡的浪潮——把精品咖啡帶進每個人的家,而不止停留在咖啡館。

咖啡品質差異的原因
01咖農
FARMER
過去沒有人關注咖啡的後製處理,現今大衆的心頭好“日曬豆”在過去只是次級品的代名詞,所謂“萬般皆下品,唯有水洗高”,不好的豆子纔拿來做日曬,所以過去的日曬品質相當不穩定。隨着咖農不斷的學習精製處理,漸漸地纔有了“微批次”,正是因爲這些“微批次”造就了許多不可思議的風味之後,咖農纔想經過歸納和改進增加產量,做出同等的風味,讓更多的人可以喝到。所以咖農的技術進步了,讓我們的咖啡品質也跟以前完全不一樣了。

02品質管理
QUALITY CONTROL
這裏指的是對咖啡品質管理的人,比如每家店都會有幾個杯測師,其職責是對店內每款豆子做出專業、公正的評價,正因爲有了這些人對咖啡品質的管控,以致我們對咖啡的要求也變得越來越高。

03烘焙師 / 烘焙機
ROASTER
隨着先進科技的輔助越來越多,咖啡有了更多的可能性。比如說現在的烘焙機都不太會將銀皮燒焦,這可能大家會覺得不以爲然,但是在早期,我們在學習烘焙的時候一定聽老師說過“一爆要開大風門”,爲了將銀皮抽走。過去的烘焙機沒有這麼完善,如果不將銀皮抽走它就會留在鍋爐裏被燒焦,從而產生煙燻味。現在的烘焙機就不會有這種困擾,設備的改良和進步,讓我們的咖啡也在往更穩定的品質邁進。

04咖啡師 / 萃取師
BARISTA & BREWER
咖啡師觀念的改變也會影響咖啡進展的空間。以前沒有人用EK43磨豆子,一臺磨豆機那麼貴,何時才能賺的回來,過去對磨豆機的定義僅僅在於“把咖啡豆碾碎就好了”。但是現在好像是個咖啡師都要有一臺EK43纔像在做咖啡,每個人都在追求好的設備。再比如當我還是個咖啡師的時候,有次有位客人要點一杯藍山,然而店裏的藍山已經賣完了,他說賣完了再去烘啊,我說生豆沒有了,我們只有哥倫比亞,他卻告訴我,有,怎麼會沒有,烘淺一點就是藍山,中烘就是哥倫比亞,烘深一點就是曼特寧。現在說來權當是笑話,但是當我們對咖啡知識並沒有很瞭解的時候,相對就會影響衝煮的人。所以咖啡師的進步也讓消費者可以喝到更好喝的咖啡。

十年前,如果有個客人跑到你店裏點一杯手衝,你可能會興奮的飛起來。如今,客人除了會要求你用V60還是Kalita萃取,還講究日曬、水洗和產區風味。我們的客人也在改變,所以對咖啡師的能力與知識要求更高。

烘焙—改變風味的方法
豆子倒入鍋爐時的溫度叫“入豆溫”,反折點叫“TP”,隨着烘焙曲線的上揚會經過“蒸發期”,然後進入“焦糖化反應期”和“梅納反應期”,最後步入“發展期”。那麼在整個烘焙的過程中,什麼因素會影響它的風味呢?

烘焙度深淺一杯咖啡的烘焙度會因咖啡豆受熱的不同而影響它風味的表現和風格的呈現,當我們在追求咖啡的巧克力和焦糖風味時,我們就不會淺焙,反之我們需要花香和水果調性的時候,就不會用深焙。烘焙度的深淺是最容易改變咖啡風味的方法。

烘焙總時間的長短很多人說烘焙總時間的長短會影響咖啡的酸度或失重,也沒有錯,但是它的真正意義在於你需要觀察時間花在哪個階段,“蒸發期”的時間多於“發展期”,還是“發展期”佔了整個烘焙總時間的大半,這對於咖啡風味的影都是巨大的。

烘焙發展期長短所謂的“烘焙發展期”是指從一爆開始到出鍋的階段,發展期的長短也會影響咖啡風味的表現。如今有些人打比賽,會將豆子烘焙的非常淺用於做Espresso的萃取,反而會得獎,原因在於雖然豆子淺,但是它的發展期非常長。咖啡有兩個味道要不得,一個是“生味”,另一個是“燻味”。當我們的咖啡豆夾生,會有類似“蔬菜的苦”出現,那是有機酸還未完全分解,所以請你把發展期拉的長一些。
發展期就像放置水果,水果的青澀階段就像發展期的前段,當我們放置幾天後水果開始成熟,甜度和香氣開始增加,這就像發展期的中段,在其後段你會發現香氣中還帶出一些酒香,甚至是莓果的味道。但是,發展期並非越長越好,因爲過長會抹掉豆子許多風味。

火力/風門的配置烘焙圈流行三種烘焙方式:北歐烘焙、日式烘焙和胡亂烘焙(開玩笑)。
這裏以“北歐”的淺焙爲例,爲什麼北歐人慣用“大火力、大風門”把豆子烘的淺淺的,他們爲什麼對“酸”的接受力那麼強?原因在於北歐太冷,不產水果,水果都還在“生”的時候就用船從熱帶國家運往北歐,所以他們喫的水果都是從青澀時放置到熟成的,於是酸度會特別高,所以北歐人習慣了咖啡或水果中帶着高度的酸。於是“大火,大風門”的淺焙對他們來說就是合適的焙度,因爲可以保留足夠的酸。

升溫斜率ROR值升溫斜率(Rate of Rise),英文簡稱ROR,即每分鐘的升溫速度。從烘焙曲線圖上看,曲線的斜度越高,表示它升溫速度越快,所呈現的咖啡風味是比較活潑的,反之ROR值比較低的話,你會發現這杯咖啡喝起來是比較沉穩的,比如日式烘焙。所以,通過改變升溫斜率,也可以給咖啡帶來不同的變化。

豆色內外差異RD值當我們烘焙一支咖啡時,豆表色和豆芯色的差異,帶給咖啡的層次感和變化是不一樣的。這就好比煎牛排,當牛排快好的時候,加大火力,把表皮烤的焦一些,放大它的梅納反應和焦糖化反應,那麼牛排就會很香很酥脆,很好喫。還有另一種“酥肥法”,將肉用真空包裝包起來,放在60度的水裏浸泡一天左右,當你取出來的時候整塊肉都一樣熟,軟軟嫩嫩的,也很好喫。所以如今的烘焙想法是,不一定要北歐的“火烤”手法,也可以用日式的“酥肥”法,各有各的味道,而如何去靈活運用並將其不同的風味表現出來,是我們要思考的。

滾筒轉速烘焙有三種熱傳導模式:對流傳導、接觸傳導和輻射傳導,這三種熱傳導對應着三種不同的烘焙機——熱風式、半熱風式和直火式。當滾筒的轉速慢,豆子停留在鍋壁上的時間就會變長,熱傳導的效應也就變長,所以滾筒的轉速會改變烘焙的熱傳導結構。

梅納反應期
梅納反應開始展開的時期(從豆子變黃開始到出鍋,梅納反應都在進行,但在烘焙中只測量到一爆密集)豆子開始變黃,產生稻草味
驚人的一連串複雜的化學反應發生
類黑素開始形成,除此之外還有其他揮發與非揮發的芳香物質產生 氨基酸開始進行史崔克降解 若此階段的反應時間較短,會造成低醇厚度及複雜度的降低 若此階段的反應時間較長,會有厚重的醇厚度即風味的增加05.
烘焙的發展期
我們可藉由烘焙的節奏來建立生豆內的壓力和調整烘焙的時間,可利用比例尺的概念,運用壓力控制化學反應以達到想要表達的風味。
快速烘焙:壓縮了梅納反應和發展期的時程,因此,梅納反應的效率程度降低,可能會導致咖啡風味複雜度的不足;慢速烘焙:由於火力較弱,所以需要足夠的時間讓化學反應產生,可能依情況需要適度的增加梅納反應以及發展期的時間,以此爲風味的複雜度做出貢獻。
發展期越長,咖啡中有機酸的濃度就越低,此時咖啡的柔順度和圓滑度便會增加,我們會喝到明亮的酸及水果韻;發展期太短會有類似金屬感或是青草味的苦味產生,那是有機酸未完全分解產生的,而過度發展將會使有機酸較爲鈍化,將咖啡的活力淡化。
綠原酸、檸檬酸和蘋果酸的降解伴隨着大量醋酸的產生成爲量最多的有機酸,影響咖啡的風味。

來個總結
在世界烘焙賽評分表中“X2”的項目是目前所有世界賽通用的標準,即強化咖啡液風味、平衡感和綜合喜好,因爲越平衡的咖啡,越多人會喜歡,這是商業取向的考量。
而在美國烘焙協會的評分表上對於咖啡的“幹香”與“咖啡液風味”做了除法,他們認爲咖啡的香氣和風味源自豆子本身的味道,跟你的烘焙技術沒有太大關係。所以他們更看重細柔的果酸、body的質感和甜感的表現,這些項目會被放大。

烘焙杯測“雷達圖”
“雷達圖”是由Jacky自創的快速且有效的記憶豆子風味特徵的杯測表,通過此表可以找出“風味互補”的方法,共由6個品項組成:Flavor(香氣)、Process(後製處理)、Texture(觸感,即我們所說的body)、Acidity(酸質)、Sweet(甜感)和Aftertaste(餘韻)。
當咖啡熱的時候我們感官記憶到的是香氣和餘韻,同時我們可以喝出這支咖啡的後製處理法和烘焙度,當咖啡冷的時候記憶到的則是酸質和body,同時可以體會甜感。當我們瞭解咖啡熱和冷的不同表現及感官記憶點後,如果我們要打烘豆賽,你能讓評審在喝熱咖啡的同時找到冷咖啡該有的感官記憶點,你就知道烘焙應該朝哪個方向去發展了。
