	　　要認識咖啡，首先要由原材料咖啡生豆開始。咖啡豆原產地來自不同的國家，而咖啡樹在不同地方成長，品質上都會有差異。咖啡豆主要分爲阿拉比卡 (Arabica)與羅姆斯達(Robusta)兩類，優質的Arabica大多種植在海拔1000米以上的高地，而適應能力較強的Robusta則多種 植在海拔1000米以下的地區。每種咖啡豆的酸度、苦味皆不相同，要了解其特性，纔可衝烹出一杯適合客人口味的咖啡。</div>

	　　精品咖啡受歡迎，無疑令咖啡業更多元化，咖啡師必須不斷提升自己，才能迎合不同顧客的喜好。很多咖啡師都是由低做起，但其知識或會侷限於工作所涉及的層面，不一定有機會獲得全面的咖啡知識。</div>

	　　如想成爲專業咖啡師，除了邊學邊做，其實也可以藉進修爲入行鋪路。現時坊間有不同的咖啡證書課程可供選擇，但是受到國際認可的則只有 SCAA (Specialty Coffee Association of America)、SCAE (Specialty Coffee Association of Europe)及 City and Guilds。其中City and Guilds設有「國際咖啡調配師技巧資格」課程，透過20小時的培訓，學員可學習咖啡知識、咖啡機操作、飲品調配技巧(包括咖啡、巧克力、茶及 smoothies)及顧客服務技巧。完成課程並經評審後，便可獲咖啡調配師資格。</div>
