產品描述： 西達摩是埃塞俄比亞南部的着名咖啡產區，與肯尼亞接壤。咖啡風味因不同的土壤種類、微氣候及數不清的原生咖啡種，造就了每個城鎮所生產的咖啡都有明顯的差異與特色。該區地質屬於養分肥沃、排水良好的火山土壤，土壤的深度將近兩公尺，表層土壤呈現深褐色或是棕色。該地最大優勢在於土壤地力是透過自然有機物質的循環來維持的，藉由周邊林木枯萎的落葉或凋零物、植物的殘根作爲天然肥料。本批次產自於迪拉城（Dilla town)附近的希爾莎合作社。合作社成立於1976年，目前是西達摩農民合作社聯盟SCFCU（Sidama Coffee Farmer Cooperative Union)旗下的成員。</div>

在2010年—2012年度連續獲得美國權威咖啡評點網站Coffee Review 92和94分的超高評價。該產區屬於養分肥沃、排水良好的火山土壤。這些肥沃的養分都是通過自然有機物質的降解來維持的。本批次位於迪拉城（Dilla town）附近的希爾莎合作社所生產。該合作社成立於1976年，目前是西達摩農民合作社聯盟（Sidamo Coffee Farmer Cooperative Union）的成員！</div>

埃塞俄比亞咖啡可分爲兩大處理法 1.水洗處理法 2.自然日曬處理法。現今在埃塞俄比亞每一個產區·合作社·甚至小咖啡農莊均會同時生產上述兩種處理法的咖啡豆，不論是臺灣熟知的耶加雪夫產區或西達摩省產區。不僅如此在目前咖啡發展最快速的國家埃塞俄比亞，不僅在處理法上讓咖啡產生差異性，就連相同處理法也可因不同手法與工藝的調整讓香氣與口感產生不同，耶加雪夫日曬豆與西達摩日曬豆香氣上就有所不同常常讓人產生錯覺，採水洗法的埃塞俄比亞咖啡豆，香氣溫和低沉·檸檬痠軟性低調·風味一致性高以口感取勝，而採日曬法的埃塞俄比亞咖啡豆，香氣強烈顯眼·檸檬酸的薄弱不明顯·風味複雜多變以花香或果香爲擅場的特性。</div>

前年生豆商B的獅子王上市的時候， 不少店家爲它的強烈水果調性所吸引， 曾造成一波的搶購， 兩個月前發表時， 已經有聽說今年的品質也相當優異， 不輸給前年的批次。 今年是埃塞俄比亞的大年， 直至目前爲止， 還沒有喝到甚至耳聞市場上有雷， 反而是不少豆子開始出貨的幾周內就售罄， 獅子王就是其中一支。</div>

因爲本站的贊助夥伴跟這支咖啡有某種程度上的感情， 所以聽聞獅子王上市後， 就立即跟生豆商下訂， 但可惜已太遲。 所以筆者只好從零售商購買少量生豆來測試。 據生豆商提供的杯測風味， 主調性是熱帶水果， 莓果， 與一些桃子的香氣， 質地細膩， 平衡感高， 乾淨， 尾韻長， 甜度高。</div>

這次的烘焙量500g, 先取100g樣品估算瑕疵比率。 生豆有非常棒的發酵酸香， 像是醃漬楊桃， 豆相也非常漂亮， 100g裏只有挑出3.6g的瑕疵， 而且是以碎豆爲主， 以日曬Heirloom來說是相當不錯的品質。</div>

豆子密度高， 含水量也高， 所以將入豆溫設定185度， 重量481g, 回溫點約落在1分96.7度， 一爆的時間點大約是6:45, 198.6度， 進入一爆後45秒下豆， 7:30溫度205度。 熟豆重量429.2g, 失重率11%</div>

放置24小時後測試， 這次使用20g的咖啡， 溫度93.1萃取45g的Espresso, 加溫水製作成熱美式來測試。 磨開時， 如紅色莓果的甜香氣明顯， 加水稀釋過後， 溼香的主調轉換成杏桃， 帶點柑橘與桃子的多汁風味與莓果的酸甜感， 整體的平衡感也相當棒， 雖然說水果的味譜太廣， 缺乏強烈的主調， 很難能給喝的人痛快一擊， 但不失爲一支好喝， 多變性佳的咖啡……</div>
